Pesto & Bacon Gnocchi with Rocket

A super quick, flavour packed Italian dinner

This is a fantastic Italian-inspired midweek meal that can be whipped up in almost no time. When you’re in a hurry it’s pretty hard to go past pillows of gnocchi tossed in basil pesto, with crispy sautéed bacon and peppery rocket.

Ingredients

500 grams store-bought gnocchi
60 grams wild rocket
250 grams streaky bacon, thinly sliced
5 tablespoons basil pesto (store bought is fine)
salt and pepper
Parmesan cheese for grating

Recipe

Bring a large pot of salted water to the boil.
Cook the bacon in a sauté pan on medium heat for 5-7 minutes until golden and crispy, then remove and drain on paper towels to soak up any excess oil.

While the bacon is cooking, cook the gnocchi according to the packet instructions, then drain and return to the pot.

Add the pesto and cooked bacon to the drained gnocchi and toss until well coated, then fold in half the rocket. Divide the remaining rocket between each plate, and add the gnocchi. Finish with a final flourish of grated Parmesan and a good twist of pepper.

(It might not look like a lot of gnocchi as they are small, but they’re very filling, so a little goes a long way in this case.)
