Homemade muesli is just fantastic. Packed with nutritious, vitamin rich ingredients, ready and waiting for you when you get out of bed. I’ve added some delicious cacao nibs which are the nutrient rich raw ingredient in chocolate. It’s not sweet, but when combined with the creaminess of the oats and milk, its an exciting and delicious texture you’ll know and love.
450g wholegrain oats
50g desiccated coconut
25g sliced almonds
25g chopped hazelnuts
10g poppy seeds
30g sunflower seeds
30g pumpkin seeds
10g sesame seeds
50g dried apricots, roughly chopped
30g sultanas
30g dried cranberries
½ teaspoon cinnamon (optional)
25g cacao nibs (optional)
Natural Muesli: Place all the ingredients into a large bowl and mix until fully combined.
Place into a large airtight jar, this makes enough to fill a 1.5 litre Jar.
Serve roughly 50g per person with milk, dollops of thick Greek yoghurt and your favourite seasonal fruit.
If you want, you can turn this muesli into bircher muesli. Simply add the desired amount of muesli to a bowl, pour over enough milk to just cover the muesli, cover the bowl in plastic wrap and leave in the fridge overnight to soak. In the morning grate over some apple or pear, mix until combined and serve with your favourite toppings.
