These chicken nibbles are the definition of finger licking good. Smothered in a beautiful homemade bbq sauce, spiked with rum. These nibbles are perfect for parties, watching the big game or just enjoying with friends. And as a bonus the bbq sauce can be used on pretty much anything, oh except salads.
1 kilogram packet chicken nibbles (I used Turks Free-Range)
BBQ Sauce
100g soft brown sugar
150g ketchup
2 tablespoons American mustard
2 tablespoons hickory chilli sauce
4 tablespoons balsamic vinegar
½ cup rum
2 tablespoons Worcestershire sauce
pinch of salt and pepper
To serve
spring onions (green parts only), finely sliced for garnish
lemon wedges (optional)
Prep time: 10 minutes
Cooking time: 1 hour
Preheat the oven to 180°C fan bake.
Place the chicken nibbles in a deep roasting dish, drizzle with olive oil and season with salt and pepper. Bake for 30 minutes.
BBQ sauce: Place all the ingredients in a saucepan over a high heat. Whisk together, bring to the boil, then reduce the heat and simmer for 10 minutes. Set aside.
Remove the chicken nibbles from the oven after 30 minutes. Pour over half the BBQ sauce, ensuring all the chicken is coated well, then return to the oven for 30 minutes, tossing occasionally.
Place the cooked chicken nibbles on a serving platter and scatter over the sliced spring onions, and serve with lemon wedges if you like.
The barbecue sauce recipe makes enough for 2 batches of nibbles.
