A big bowl of this delicious Bircher muesli will have you raring to go. The best bit is that all the prep work is done the night before. It’s packed with oats, grated banana and apple with a touch of sweetness thanks to Canadian maple syrup. Come on, what’s not to love.
3 cups wholegrain oats
2 cups milk
½ cup yoghurt
2 tablespoon maple syrup
1 unripe banana, grated
1 apple, grated
To serve
Your favourite fruit
Yoghurt
Roughly chopped hazelnuts
Prep time: 5 minutes
Cooking time: Overnight
Bircher Muesli: Place all the ingredients in a large bowl and mix well. Cover and refrigerate overnight. (This will allow the oats to soak up all the liquid and become plump and juicy.)
To serve: place the desired amount in a bowl, top with your favourite yoghurt, fruit and those chopped hazelnuts.
nb: This makes a large amount and will easily serve a family of four twice. It will keep in the fridge for 4-5 days and will taste even better after a few days. Feel free to half the recipe if required
