Cannellini Bean Salad

the secret is in the dressing

A quick and easy bean salad to whip up for a weeknight treat. The secret to this simple salad is the tarragon dressing. The fresh herb adds an incredible flavour and brings the whole thing to life. Hunt it out and give it a go, because life is too short to eat boring salads.


1 x 400 gram tin cannellini beans, drained and rinsed
1 large celery stalk, finely diced
200 grams cherry tomatoes, roughly chopped
1 large spring onion, finely sliced

3 tablespoons olive oil
1 tablespoon white wine vinegar (or lemon juice)
1 tablespoon fresh tarragon leaves, finely chopped (or Italian flat-leaf parsley)
2 teaspoons Dijon mustard
salt and pepper

Prep time: 15 minutes


Dressing: Place all the ingredients in a bowl and whisk to combine, then set aside.

Salad: place all the ingredients into a bowl, season with a pinch of salt and pepper, add the dressing then toss until fully combined you’re ready to go
