Chocolate Mousse

Is there anything more alluring than a silky chocolaty mousse. I think not, and this is exactly what I’ve created. I’ve spiked it with a little whiskey to make it feel more grown up, but feel free to leave it out to make it more family friendly.

Ingredients

250 grams dark chocolate
2 cups cream
4 free-range egg whites
2 tablespoons caster sugar
2 tablespoons whiskey (optional)

4-6 glasses or ramekins
Grated chocolate for

Prep time: 20 minutes
Chilling time: 3-4 hours

Recipe

Mousse: Place the chocolate and 1 cup of the cream in a saucepan over a low heat. Stir until the chocolate has melted. Tip into a large bowl and set aside to cool slightly.
In a clean bowl, whisk the egg whites with the sugar until they form stiff peaks.
In a separate bowl, whisk the remaining cup of cream with the whiskey (if using) until it holds firm peaks.
Fold half the egg white mixture into the cooled chocolate to loosen it. Fold in the remaining egg whites, then the whisked cream. Whisk until fully combined. Divide the mousse evenly between 4 or 6 glasses and refrigerate for at least 3-4 hours.

This dessert can be made the day before and refrigerated until ready to serve.

tip – this recipe calls for egg whites leaving you with egg yolks which you can use to make beautiful homemade mayonnaise. You have to try it.
