Making your own muesli is a revelation. The taste is amazing and you can add what you want to craft your own secret recipe. I’ve sweetened mine with maple syrup and toasted it, which makes all the difference. If you’ve never made your own muesli this basic recipe is a great place to start.
3 cups oats
1 cup shredded coconut
¼ cup sunflower seeds
1/3 cup pumpkin seeds
½ cup sliced almonds
2 tablespoons sesame seeds
¾ cup maple syrup
¼ cup coconut oil, melted (optional)
1/3 cup sultanas/raisins
1/3 cup dried cranberries
Muesli: place the oats, coconut, sunflower seeds, pumpkin seeds and sesame seeds in a large bowl and toss until well combined. Mix together the maple syrup and coconut oil if using, then pour over the oats and mix until everything is coated. Tip out onto a shallow sided roasting tray lined with baking paper and bake for 20-25 minutes in an oven preheated to 180 °C turning 2-3 times during baking until golden and toasted.
Remove and allow to cool completely then mix through the sultanas and cranberries and store in an airtight container.
Serve with milk, unsweetened or coconut yoghurt, fresh fruit, or homemade raspberry coulis like I do.
