How can something so delicious be so easy to make. Packed with marshmallows, coconut, dried cranberries and crumbly biscuits this is perfect for kids lunch boxes, picnics or just to have on standby in the fridge.

Ingredients

325 grams good quality dark chocolate
175  grams unsalted butter
100 grams marshmallows
20 grams desiccated coconut
80 grams dried cranberries
150 grams of digestive biscuits

24 x 20cm serving dish (lined with baking paper)

Recipe

Rocky Rocky Road: Place the chocolate and butter in a heat proof bowl over a pot of simmering water and melt slowly. (don’t let the bowl touch the water) While the chocolate melts to a large bowl add the marshmallows, coconut and cranberries. Then using your hands crush the digestive biscuits into bite size pieces and sprinkle over the top. Mix all the ingredients thoroughly. When the chocolate & butter have melted, mix well then pour two thirds over the top of the ingredients and mix in really well.

Tip into the rectangular serving dish and press in gently. Take the remaining chocolate mixture and pour over the top making sure it fills all the gaps. Smooth the top, cover with plastic wrap and refrigerate for at least 4 hours before cutting.

To serve remove from dish, dust with icing sugar and slice into bite size chunks.
