Delicate, fragrant and absolutely delicious

These poached pears are a simple dessert but a real showstopper. Serve them up with lashings of cream, your favourite vanilla ice-cream or dare I say it, a naughty drizzle of salted caramel. However you decide to serve them, they’ll be absolutely delicious.
4 pears, peeled, leaving the stalk intact.
1 cup caster sugar
1 vanilla pod, halved
1 cinnamon stick
pinch of saffron (optional)
To serve
Cream, or vanilla ice-cream
(serves 4)
Combine all the ingredients in a large saucepan, cover with water, bring to a boil, then reduce to a simmer and gently poach the pears for 1 ½ hours until nice and tender. Remove and set aside to cool.
While the pears cool, discard half the cooking liquid and boil the remaining liquid until it has reduced to a sticky glaze.
Serve each pear with a tablespoon or two of the glaze and finish with some cream, or serve with vanilla ice-cream.
Pears can be made ahead and served at room temperature.
